After the third attempt. I convinced that this recipe is the best one to share with you. It all started with a boring day at the library. I scan editions of Saveurs to look for a carrot cake recipe, I have to admit that what I miss the most about US is the food. Cream cheese is not available in all groceries and the cakes and donuts aren't as much accessible as the brioche and the viennoise. I dreamt about eating a soft tender carrot cake complete with the creamy icing. This appetite has been haunting me until I melt for a series of cake recipes, and at that moment I can't help not to fall. Hear this: Banana Cake with Walnut and Dates.
Compared to the banana bread I made a long time ago, this one is far more tender. The ingredients are so rich that every bite is a surprise. Enjoyable with a glass of cold milk, this cake is perfect for a breakfast, an afternoon snack, or even for a picnic.
Ingredients:
150g of soft butter
150g of sugar
4 eggs
200g flour
15g (or 1 sachet) of raising powder
3 bananas
1 tsp of cinnamon powder
1/2 cups of dates
1/2 cups of walnut
1/2 cups of chocolate chips <- optional
Crushed the bananas with a fork, cut the walnuts into pieces, and do the same with the dates. Make sure the seeds are taken out. Beat the eggs, add the sugar, and beat for one minutes. While keep beating, add consecutively the butter, the flour, the raising powder, and the cinnamon. Finally, add the crushed banana and the rest of the ingredients. Bake for 45-50 minutes in a preheated oven of 180 Celsius degree or until the edge turns golden. I don't have an oven, so a bread making machine works as well, in that case, I'd let it bake for 1 hour.
Have fun baking your cake!
